Preheat oven to 180°C.
Grease an 8-inch round baking pan with oil. You can also use parchment paper to line for easy removal.
Add 3 beaten eggs, pandan juice, MARIGOLD Yogurt, coconut milk, sugar and vanilla essence into a mixing bowl. Stir well until sugar is completely dissolved.
Soak bread in the pudding mixture until the bread absorbs the mixture all the way to the center and then arrange the bread slices in the pan. Pour the remaining mixture over the bread.
Top bread pudding with cereal and dates with butter slices on top.
Bake bread pudding in a water bath for 30 - 40 minutes until cooked through.
Serve bread pudding with an additional scoop of MARIGOLD Yogurt with honey and mint leaves.
